PURPOSE OF THE POSITION: You will provide professional culinary services for Royal Canadian Pacific, Canadian Pacific Board and Executive and CPR Pavilion. POSITION ACCOUNTABILITIES: Create memorable dining experiences for all CPKC guests for moving train, stationary, CPR Pavilion and off-site catering events and all corporate Hospitality events Plan and implement all phases of food preparation, menu planning, purchasing, inventory management and cost controls Design opportunities to increase food revenue, decrease kitchen expenses and maximize productivity without compromising guest satisfaction Support a safe working environment by ensuring all staff are working in compliance with Occupational Health and Safety Act, WHMIS and federal health regulations Maintain all kitchen equipment in clean and proper working condition and report any equipment in need of repair. Sanitation of all food production and storage areas Maintain a record of individuals with special dietary requirements and preference and ensure that these are properly accommodated in the planning of menus and preparing of food Select and use only the freshest fruits, vegetables, meats, fish, fowl and other food products of the highest standard in the preparation of all menu items. Monitor to ensure proper receiving, storage (including temperature setting) and rotation of food products to comply with health and safety regulations including coverage, labeling, dating, and placing items in proper containers of kitchen and service Management and development of the CPKC Wine Cellar with view to menu planning and corporate gifting Mentorship and training of apprentice chefs Knowledge of new trends in food presentation and preparation POSITION REQUIREMENTS: Minimum of Chef Journeyman’s Papers or international equivalent ProServe and Food Safety certification Standard first aid Thorough working knowledge of hot and cold food preparation Knowledge of new trends in food presentation and preparation Knowledge of wines and wine/food pairing and presentation Ability to develop and execute new and innovative menus Ability to analyze and interpret financial information related to menu planning, food costing, yield calculation, and portion control Able to maintain accurate records pertaining to food safety and purchasing A passion for food, desire to further develop culinary and leadership skills Strong communication, problem solving, decision making, and interpersonal skills Ability to work appropriately with all levels of corporate executive and/or well-known/celebrity guests Demonstrated high level of respect, discretion and confidentiality Must possess a valid driver’s license Must possess a valid Canadian Passport or able to obtain one Must be able to enter the United States WHAT CPKC HAS TO OFFER : Flexible and competitive benefits package Competitive company pension plan Employee Share Purchase Plan Performance Incentive Program ADDITIONAL INFORMATION: As an employer with North American presence, the possibility does exist that the location of your position may be changed based on organizational requirements.
